  • 2 tbsp fresh lime juice about 1 medium lime
  • 1 tbsp Dijon mustard
  • 2 tbsp fresh chives finely chopped
  • 2 tbsp fresh cilantro leaves roughly chopped
  • 0.25 small red onion very finely diced
  • 0.5 tsp kosher salt plus more
  • 0.25 tsp black pepper freshly ground
  • 1 pinch chili flakes
  • 1 tsp pepitas or black sesame seeds

Instructions

  1. Place @[Eggs] in a #[Saucepan] and cover with cold water by 1 inch. Bring to a boil ^[over medium-high heat], then cover, remove from heat, and let sit ~[for 10–12 minutes]. Transfer @[Eggs] to an ice bath ~[for 5 minutes], then peel and roughly chop.
  2. In a large #[Mixing Bowl], mash the @[Avocado] flesh with a fork until mostly smooth but still slightly chunky. Stir in the @[Lime Juice] and @[Dijon Mustard] until combined.
