6 large eggs hard-boiled and peeled
2 ripe avocados halved, pitted, and scooped
2 tbsp fresh lime juice about 1 medium lime
1 tbsp Dijon mustard
2 tbsp fresh chives finely chopped
2 tbsp fresh cilantro leaves roughly chopped
0.25 small red onion very finely diced
0.5 tsp kosher salt plus more
0.25 tsp black pepper freshly ground
1 pinch chili flakes
1 tsp pepitas or black sesame seeds

8 large butter lettuce leaves for wrapping or serving as cups

Instructions
- Place @[Eggs] in a #[Saucepan] and cover with cold water by 1 inch. Bring to a boil ^[over medium-high heat], then cover, remove from heat, and let sit ~[for 10–12 minutes]. Transfer @[Eggs] to an ice bath ~[for 5 minutes], then peel and roughly chop.
- In a large #[Mixing Bowl], mash the @[Avocado] flesh with a fork until mostly smooth but still slightly chunky. Stir in the @[Lime Juice] and @[Dijon Mustard] until combined.
- Add the chopped @[Eggs], @[Red Onion], @[Chives], and @[Cilantro] (if using) to the @[Avocado] mixture. Fold gently to combine — you want some texture, not a paste. Season with @[Salt], @[Black Pepper], and @[Chili Flakes] to taste.
