In a large mixing bowl, whisk together the 8 eggs grandes, ¼ cup de leche entera, ½ tsp de sal kosher más al gusto, and ¼ tsp de pimienta negra until smooth and slightly frothy — about 30 seconds of vigorous whisking.

Heat the 2 tbsp de aceite de oliva in a 10-inch oven-safe skillet (cast iron or stainless steel works best) over medium heat. Add the 1 chalota en rodajas finas and cook, stirring occasionally, until softened and translucent, about 3 minutes.

Add the 2 cloves de ajo and 1 bunch de espárragos con los extremos leñosos retirados pieces to the skillet. Season lightly with ½ tsp de sal kosher más al gusto. Scatter the crumbled 3 oz de queso de cabra evenly over the top. Sprinkle the grated de parmesano across the surface. Let the frittata cook undisturbed on the stovetop for about 2 minutes, until the edges just begin to set.
