Prep your toppings first: dice the 1 yellow onion finely diced and 2 medium roma tomatoes diced, shred the lettuce, slice the 1 whole jalapeño thinly sliced, and set everything out in small bowls so your toppings bar is ready to go.

Uses

  • Yellow Onion
  • Onion Powder
  • Tomato
  • Jalapeño
  • 7–8 min
  • Medium-High

Heat a large skillet over medium-high heat. Add the 1 ½ lb ground beef 80/20 recommended and diced yellow onion finely diced. Cook, breaking the meat into small crumbles with a wooden spoon, until the 1 ½ lb ground beef 80/20 recommended is browned and the 1 yellow onion finely diced is softened, about 7–8 minutes. Drain off any excess fat, leaving just a thin film in the pan.

Uses

  • Skillet
  • Wooden Spoon
  • Beef
  • Yellow Onion
  • Onion Powder
  • 1 min

Add the minced cloves garlic minced and cook for 30 seconds until fragrant, stirring constantly.

Add the 1 tsp chili powder, 1 tsp ground cumin, ½ tsp smoked paprika, ½ tsp garlic powder, ½ tsp onion powder, ¼ tsp dried oregano, ¼ tsp cayenne pepper (if using), 1 tsp kosher salt, and ½ tsp black pepper. Stir well to coat the meat in the spices and cook for 1 minute to bloom the spices.

  • Paprika
  • Garlic
  • Yellow Onion
  • 5 min
  • Medium-Low

Pour in the 1 can tomato sauce and ¼ cup water. Stir to combine, then reduce the heat to medium-low and simmer uncovered for 5 minutes, until the sauce thickens and clings to the meat. Taste and adjust 1 tsp kosher salt as needed. Remove from heat.

Uses

  • Tomato
  • Water
  • Kosher Salt

To assemble each walking taco: hold a snack-size fritos corn chips bag upright and gently crush the chips inside slightly with your hand — this creates more surface area and makes eating easier. Cut or tear open the top of the bag.

Uses

  • Fritos Corn Chips
  • Corn Chip

Spoon a generous portion of the hot taco meat (about 3–4 tablespoons) directly into the open chip bag on top of the chips.

Uses

  • Corn Chip

Top with shredded 1 ½ cups shredded Mexican cheese blend (the heat from the meat will melt it slightly), a dollop of sour cream, a spoonful of salsa your favorite jarred or fresh, shredded lettuce, diced medium roma tomatoes diced, and any other toppings you like. Add a squeeze of whole limes cut into wedges and dig in with a dipping fork right from the bag!
