Cook the 2 cups jasmine rice according to package instructions. Fluff with a fork and keep covered until ready to serve.

Uses

  • Jasmine Rice

Open the cans of full-fat coconut milk do not shake before opening without shaking them. Carefully scoop out the thick cream that has risen to the top and set it aside. Reserve the remaining coconut liquid separately.

Uses

  • Coconut Milk
  • 2–3 min
  • Medium-high

Heat the 1 tbsp vegetable oil in a wok or large deep skillet over medium-high heat. Add the thick coconut cream and cook, stirring frequently, for 2–3 minutes until it begins to bubble and the oil starts to separate — this 'cracks' the coconut cream and builds flavor.

Uses

  • Wok
  • Skillet
  • Vegetable Oil
  • Coconut Milk
  • 1–2 min

Add the 3 tbsp Thai green curry paste to the cracked coconut cream. Stir and fry for 1–2 minutes until very fragrant and the paste darkens slightly.

Uses

  • Green Curry Paste
  • Coconut Milk

Add the 4 stalks lemongrass bruised and cut into 2-inch pieces, galangal (or ginger), and 6 whole kaffir lime leaves torn in half. Stir to combine with the paste.

Uses

  • Lemongrass
  • Kaffir Lime Leaves
  • Green Curry Paste
  • 2–3 min

Add the 1 ½ lb boneless skinless chicken thighs pieces in a single layer. Stir to coat in the paste and cook for 2–3 minutes until the outside turns opaque.

Uses

  • Chicken Thigh
  • Green Curry Paste
  • Medium

Pour in the reserved coconut liquid and stir well to combine. Bring to a gentle simmer over medium heat.

Uses

  • Coconut Milk

Add the 2 tbsp fish sauce and palm sugar. Stir to dissolve the sugar. Taste the broth — it should be balanced: savory, slightly sweet, and fragrant. Adjust with more 2 tbsp fish sauce (saltier) or sugar (sweeter) as needed.

Uses

  • Fish Sauce
  • 5–7 min

Add the 2 medium zucchini halved lengthwise and sliced into half-moons and 1 red bell pepper. Simmer for 5–7 minutes until the vegetables are just tender and the 1 ½ lb boneless skinless chicken thighs is cooked through (internal temperature of 165°F).

Uses

  • Zucchini
  • Red Bell Pepper
  • Vegetable Oil
  • Chicken Thigh

Remove from heat. Stir in the baby spinach (if using), 1 cup Thai basil leaves loosely, and 1 tbsp lime juice. The residual heat will wilt the greens gently. Remove and discard the 4 stalks lemongrass bruised and cut into 2-inch pieces pieces, galangal slices, and 6 whole kaffir lime leaves torn in half before serving.

Uses

  • Basil
  • Lime Juice
  • Green Curry Paste
  • Lemongrass
  • Kaffir Lime Leaves

Ladle the curry over bowls of steamed 2 cups jasmine rice. Garnish with fresh whole red chili slices and 1 whole lime wedges on the side. Serve immediately.
