In a small mixing bowl, whisk together the 3 tbsp extra-virgin olive oil, 1 ½ tbsp red wine vinegar, ½ tsp dried oregano, ¼ tsp garlic powder, ¼ tsp fine sea salt, and 1 pinch freshly ground black pepper until well combined. Taste and adjust seasoning — add a little more vinegar for extra tang or a pinch of sugar to balance if needed. Set aside.
