Preheat your oven to 400°F. Drain the 2 cans whole kernel corn very thoroughly in a colander — press it gently with a paper towel if needed. Excess moisture is the enemy of a good corn cheese; drier corn means a creamier, less watery result.

In a mixing bowl, combine the drained whole kernel corn, 3 tbsp mayonnaise, softened unsalted butter, 1 tsp granulated sugar, ¼ tsp kosher salt, and ¼ tsp black pepper freshly ground. Stir well until everything is evenly coated.

Transfer the corn mixture into a 6–8 inch cast iron skillet or small oven-safe baking dish and spread it into an even layer.

Sprinkle the shredded 1 ½ cups low-moisture mozzarella cheese shredded evenly over the top, covering the corn mixture completely.
