In a small mixing bowl, stir together the ¾ cup almond flour blanched, melted unsalted butter, 1 tbsp powdered erythritol, and ¼ tsp ground cinnamon (if using) until the mixture resembles wet sand. Line a 12 cups mini muffin tin with cupcake liners. Divide the crust mixture evenly among the cups (about 1 tsp each) and press firmly into the bottom with your fingertip or the back of a wooden spoon.

In a medium mixing bowl, beat the softened cream cheese with a hand mixer on medium speed until completely smooth, about 1–2 minutes. Add the 3 tbsp powdered erythritol, 1 tsp vanilla extract, 1 tbsp fresh lemon juice, and ¼ cup sour cream. Beat again until light and fluffy, scraping down the sides as needed.
