Peel 1 ½ lb carrots peeled and sliced on the diagonal into 1/2-inch pieces and slice them on the diagonal into 1/2-inch pieces. Cutting on the diagonal increases the surface area, which helps the glaze cling and allows for more even cooking.

In a large skillet or wide saucepan, combine 1 ½ lb carrots peeled and sliced on the diagonal into 1/2-inch pieces, 3 tbsp unsalted butter, 2 tbsp honey, 1 tbsp brown sugar, ½ cup water, and ¼ tsp salt. Stir to roughly combine and spread the carrots into an even layer.
