Make the simple syrup: Combine equal parts ½ cup granulated sugar and ½ cup water in a small saucepan over medium heat. Stir until the ½ cup granulated sugar is fully dissolved, about 2–3 minutes. Do not boil. Remove from heat, let cool completely, then transfer to a quart jar or bottle. Refrigerate until cold.

Chill your glass (Large) in the freezer for 5–10 minutes, or fill it with ½ cup water while you prep the cocktail.

Fill a mixing bowl with 1 cup ice for shaking. Add the 1 ½ oz gin London Dry style recommended, fresh fresh lemon juice freshly squeezed, and ¾ oz simple syrup 1:1 ratio (equal parts sugar and water).

Shake vigorously for 12–15 seconds until the shaker is very cold and frosty on the outside.

Discard the ½ cup water from your chilled glass (Large) (if used). Strain the shaken cocktail into the flute using a sieve.

Slowly top with well-chilled 2 oz Champagne or dry Prosecco or Cava, pouring gently down the side of the glass to preserve the bubbles. About 2 oz (a generous splash) is the classic proportion.
