  • 1 min

Crack the 4 large eggs into a mixing bowl. Add the ½ cup full-fat cottage cheese, ¼ tsp kosher salt, ⅛ tsp black pepper, and ¼ tsp garlic powder (if using). Whisk vigorously for about 30 seconds until the mixture is well combined — the ½ cup full-fat cottage cheese curds will break down slightly but don't need to be completely smooth.

Uses

  • Mixing Bowl
  • Egg
  • Cottage Cheese
  • Salt
  • Black Pepper
  • Garlic Powder
  • Medium-low

Place a skillet over medium-low heat and add the 1 tbsp unsalted butter. Let it melt and foam gently — do not let it brown. Swirl to coat the pan.

  • Medium-low

Pour the 4 large eggs mixture into the skillet. Let it sit undisturbed for about 20 seconds until the edges just begin to set, then use a spatula to gently fold the 4 large eggs from the edges toward the center in slow, sweeping motions. Continue folding every 15–20 seconds, keeping the heat on medium-low. The ½ cup full-fat cottage cheese melts into the 4 large eggs as they cook, creating an extra-creamy curd.

  • Cottage Cheese

Remove the skillet from the heat when the 4 large eggs are just barely set and still look slightly glossy — they will continue cooking from residual heat. Immediately transfer to plates. Garnish with fresh fresh chives thinly sliced and a pinch of red pepper flakes if desired. Serve alongside toasted 2 slices sourdough toast.
