Heat the 3 tbsp olive oil in a large, deep skillet or saute pan over medium heat. Add the diced yellow onion diced and both 1 red bell pepper diced and 1 green bell pepper diced. Cook, stirring occasionally, until softened and the onion is translucent, about 8 minutes.

Add the minced cloves garlic minced and cook for 1 minute more, stirring constantly, until fragrant. Be careful not to let the 5 cloves garlic minced burn.

Pour in the 1 can crushed tomatoes and ½ cup water. Add the ½ tsp sugar, 1 tsp kosher salt, and ½ tsp black pepper freshly ground. Stir everything together well, scraping up any bits from the bottom of the pan.

Using a large wooden spoon, create 6 shallow wells evenly spaced in the sauce. Crack one 6 eggs large into each well. Season the eggs lightly with a pinch of kosher salt and ½ tsp black pepper freshly ground.
