Shred the 8 oz sharp cheddar cheese freshly shredded and 4 oz Monterey Jack cheese freshly shredded from a block and set aside. Pre-shredded cheese contains anti-caking agents that prevent smooth melting, so freshly grated is strongly recommended.

Uses

  • Sharp Cheddar Cheese
  • Monterey Jack Cheese
  • Velveeta Cheese
  • 3–4 min
  • Medium

In a medium saucepan over medium heat, melt the 1 tbsp unsalted butter. Add the diced white onion and cook, stirring occasionally, until softened and translucent, about 3–4 minutes. Add the 2 cloves garlic and cook for 30 seconds more until fragrant.

Uses

  • Saucepan
  • Unsalted Butter
  • White Onion
  • Garlic
  • 1 min

Add the drained diced diced green chiles and stir to combine. Cook for 1 minute.

In a small mixing bowl or measuring cups, whisk the 1 tbsp cornstarch into the 1 cup whole milk until fully dissolved with no lumps. Pour the milk mixture and the ½ cup heavy cream into the saucepan. Stir and bring to a gentle simmer over medium heat, about 2–3 minutes.

Reduce heat to low. Add the cubed 8 oz Velveeta and stir continuously until fully melted and the base is smooth, about 2 minutes.

Uses

  • Velveeta Cheese

Add the shredded 8 oz sharp cheddar cheese freshly shredded and 4 oz Monterey Jack cheese freshly shredded in two or three small handfuls, stirring each addition until fully melted before adding the next. This gradual process ensures the dip stays silky and doesn't break.

Uses

  • Sharp Cheddar Cheese
  • Monterey Jack Cheese

Stir in the drained diced green chiles, 1 tsp ground cumin, ½ tsp chili powder, ½ tsp kosher salt, and ¼ tsp cayenne pepper (if using). Taste and adjust seasoning as needed. If the dip seems too thick, add a splash of whole milk and stir to loosen.

Uses

  • Green Chile Pepper
  • Ground Cumin
  • Chili Powder
  • Salt
  • Cayenne Pepper
  • Milk

Transfer to a serving bowl or keep warm in the saucepan on the lowest heat setting. Garnish with fresh fresh cilantro chopped and sliced small jalapeño if desired. Serve immediately with tortilla chips, warm flour tortillas, or fresh vegetables.

Uses

  • Saucepan
  • Cilantro
  • Jalapeño
