Shred the 8 oz sharp cheddar cheese freshly shredded and 4 oz Monterey Jack cheese freshly shredded from a block and set aside. Pre-shredded cheese contains anti-caking agents that prevent smooth melting, so freshly grated is strongly recommended.

In a medium saucepan over medium heat, melt the 1 tbsp unsalted butter. Add the diced white onion finely diced and cook, stirring occasionally, until softened and translucent, about 3–4 minutes. Add the 2 cloves garlic minced and cook for 30 seconds more until fragrant.
