Unwrap all 12 mozzarella string cheese sticks standard 1 oz sticks and place them in a single layer on a baking sheet. Freeze for at least 1 hour, or up to overnight. This is the most important step — frozen cheese holds its shape during frying and prevents blowouts.

Set up your breading station with three shallow bowls: Mixing bowl 1 — 1 cup all-purpose flour. Bowl 2 — beaten eggs whisked together with the 2 tbsp whole milk. Bowl 3 — 1 ½ cups Italian-style breadcrumbs, ½ cup panko breadcrumbs, ½ cup Parmesan cheese finely grated, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp dried Italian seasoning, ½ tsp kosher salt, and ½ tsp black pepper freshly ground, stirred together until combined.

Working one at a time, coat each frozen cheese stick in 1 cup all-purpose flour, shaking off any excess. Dip into the egg wash, letting the excess drip off. Roll firmly in the breadcrumb mixture, pressing gently so the crumbs adhere well on all sides, including the ends.

For a double coat (highly recommended for extra crunch and security), dip each breaded stick back into the egg wash, then roll through the breadcrumbs a second time. Press the coating firmly so it's even and compact.

Place the double-coated sticks back on the baking sheet and return to the freezer for at least 30 minutes. Do not skip this step — it re-freezes the cheese and sets the coating so it won't fall apart in the oil.

Pour 4 cups vegetable oil for frying into a large, heavy-bottomed pot to a depth of about 3 inches. Heat over medium-high heat until the oil reaches 350°F on a meat thermometer. Maintain this temperature throughout frying — too low and the sticks absorb grease; too high and the coating burns before the cheese melts.

Working in batches of 3–4 sticks at a time (do not crowd the pot), carefully lower the 12 mozzarella string cheese sticks standard 1 oz sticks into the hot oil using tongs. Fry for 60–90 seconds, turning once halfway through, until deeply golden brown on all sides. Watch carefully — they go from perfect to overdone quickly.
