Classic Mozzarella Sticks
Golden, crispy on the outside and gloriously gooey on the inside — these homemade mozzarella sticks are the ultimate crowd-pleasing appetizer. The double-coating technique and a freeze before frying are the two secrets that guarantee the cheese stays perfectly melted inside without leaking out. Serve with warm marinara for dipping and watch them disappear.

12 mozzarella string cheese sticks standard 1 oz sticks, unwrapped
Breading Station
1 cup all-purpose flour
2 eggs beaten
2 tbsp whole milk
1.5 cup Italian-style breadcrumbs
0.5 cup panko breadcrumbs
0.5 cup Parmesan cheese finely grated
1 tsp garlic powder
1 tsp onion powder
1 tsp dried Italian seasoning
0.5 tsp kosher salt
0.5 tsp black pepper freshly ground
Frying
4 cup vegetable oil for frying
Serving
1 cup marinara sauce warmed, for dipping
2 tbsp fresh parsley chopped, for garnish
Instructions
- Unwrap all 12 @[Mozzarella String Cheese Sticks] and place them in a single layer on a #[Baking Sheet]. Freeze for ~[at least 1 hour], or ~[up to overnight]. This is the most important step — frozen cheese holds its shape during frying and prevents blowouts.
- Set up your breading station with three shallow bowls: Bowl 1 — @[All-Purpose Flour]. Bowl 2 — beaten @[Eggs] whisked together with the @[Milk]. Bowl 3 — @[Italian-Style Breadcrumbs], @[Panko Breadcrumbs], @[Parmesan Cheese], @[Garlic Powder], @[Onion Powder], @[Italian Seasoning], @[Kosher Salt], and @[Black Pepper], stirred together until combined.
- Working one at a time, coat each frozen cheese stick in @[All-Purpose Flour], shaking off any excess. Dip into the egg wash, letting the excess drip off. Roll firmly in the breadcrumb mixture, pressing gently so the crumbs adhere well on all sides, including the ends.
- For a double coat (highly recommended for extra crunch and security), dip each breaded stick back into the egg wash, then roll through the breadcrumbs a second time. Press the coating firmly so it's even and compact.
- Place the double-coated sticks back on the #[Baking Sheet] and return to the freezer for ~[at least 30 minutes]. Do not skip this step — it re-freezes the cheese and sets the coating so it won't fall apart in the oil.
- Pour @[Vegetable Oil] into a large, heavy-bottomed #[Pot] to a depth of about 3 inches. Heat ^[over medium-high heat] until the oil reaches ![350°F] on a #[Meat Thermometer]. Maintain this temperature throughout frying — too low and the sticks absorb grease; too high and the coating burns before the cheese melts.
- Working in batches of 3–4 sticks at a time (do not crowd the pot), carefully lower the @[Mozzarella String Cheese Sticks] into the hot oil using #[Tongs]. Fry for ~[60–90 seconds], turning once halfway through, until deeply golden brown on all sides. Watch carefully — they go from perfect to overdone quickly.
- Remove with #[Tongs] and transfer to a #[Wire Rack] set over a paper towel-lined #[Baking Sheet]. Allow the oil to return to ![350°F] between each batch before adding the next round.
- Serve immediately with warm @[Marinara Sauce] for dipping. Garnish with chopped fresh @[Parsley] if desired.
