Preheat your oven to 350°F. Lightly grease a loaf pan or line a baking sheet with aluminum foil and coat with cooking spray.

In a large mixing bowl, combine the ¾ cup plain breadcrumbs and ½ cup whole milk. Stir together and let sit for 2–3 minutes until the ¾ cup plain breadcrumbs have absorbed the ½ cup whole milk. This panade keeps the meatloaf moist.

Add the 2 eggs lightly, diced yellow onion finely diced, minced cloves garlic minced, 2 tbsp ketchup, 1 tbsp Worcestershire sauce, 1 tsp Dijon mustard, 1 ½ tsp kosher salt, ½ tsp black pepper freshly ground, 1 tsp dried Italian seasoning, and ½ tsp smoked paprika to the ¾ cup plain breadcrumbs mixture. Stir until evenly combined.

Add the 2 lb ground beef 80/20 blend recommended to the mixing bowl. Using your hands or a fork, gently mix everything together until just combined — do not overmix, as that will make the meatloaf dense and tough.

Transfer the meat mixture to the prepared loaf pan and press it in evenly, or shape it into a free-form loaf on the baking sheet (free-form allows more surface area for the glaze). Smooth the top.

In a small mixing bowl, whisk together the 2 tbsp ketchup, 2 tbsp brown sugar, 1 tbsp apple cider vinegar, and 1 tbsp Worcestershire sauce until smooth.

Spread half of the glaze evenly over the top of the meatloaf. Reserve the remaining glaze for later.

  • 45–55 min

Bake for 45 minutes, then remove from the oven and spread the remaining glaze over the top. Return to the oven and bake for another 15–20 minutes, until the internal temperature reads 160°F on an meat thermometer.

Remove from the oven and let the meatloaf rest for 10 minutes before slicing. This allows the juices to redistribute and makes slicing much cleaner.
