Preheat your oven to 350°F. Lightly grease a loaf pan or line a baking sheet with aluminum foil and coat with cooking spray.

In a large mixing bowl, combine the ¾ cup migas de pan simples and ½ cup leche entera. Stir together and let sit for 2–3 minutes until the ¾ cup migas de pan simples have absorbed the ½ cup leche entera. This panade keeps the meatloaf moist.

Add the 2 huevos ligeramente batidos, diced cebolla amarilla, minced dientes de ajo, 2 tbsp ketchup, 1 tbsp salsa Worcestershire, 1 tsp mostaza Dijon, 1 ½ tsp sal kosher, ½ tsp pimienta negra, 1 tsp condimento italiano, and ½ tsp pimentón to the ¾ cup migas de pan simples mixture. Stir until evenly combined.

Add the 2 lb carne to the mixing bowl. Using your hands or a fork, gently mix everything together until just combined — do not overmix, as that will make the meatloaf dense and tough.

Transfer the meat mixture to the prepared loaf pan and press it in evenly, or shape it into a free-form loaf on the baking sheet (free-form allows more surface area for the glaze). Smooth the top.

In a small mixing bowl, whisk together the 2 tbsp ketchup, 2 tbsp azúcar morena, 1 tbsp vinagre de sidra de manzana, and 1 tbsp salsa Worcestershire until smooth.

Spread half of the glaze evenly over the top of the meatloaf. Reserve the remaining glaze for later.

Bake for 45 minutes, then remove from the oven and spread the remaining glaze over the top. Return to the oven and bake for another 15–20 minutes, until the internal temperature reads 160°F on an meat thermometer.

Remove from the oven and let the meatloaf rest for 10 minutes before slicing. This allows the juices to redistribute and makes slicing much cleaner.
