Instructions

  1. In a large #[Mixing Bowl], combine the @[Rolled Oats], @[Flaxseed], @[Chia Seeds] (if using), @[Mini Chocolate Chips], and @[Kosher Salt]. Stir together until evenly mixed.
  2. Add the @[Creamy Peanut Butter], @[Honey], and @[Vanilla Extract] to the bowl. Using a #[Spatula] or clean hands, mix everything together until fully combined. The mixture should be sticky and hold together when pressed. If it feels too dry, add an extra teaspoon of @[Honey]. If too wet, add a tablespoon of @[Rolled Oats].
  3. Cover the bowl with #[Plastic Wrap] or a lid and refrigerate for ~[30 minutes]. Chilling makes the mixture much easier to roll and helps the bites hold their shape.
  4. Line a #[Baking Sheet] with #[Parchment Paper]. Remove the chilled mixture from the refrigerator. Using slightly damp hands (this prevents sticking), scoop about 1.5 tablespoons of the mixture and roll firmly between your palms to form a ball. Place on the prepared #[Baking Sheet]. Repeat until all the mixture is used — you should get about 20 bites.
  5. Place the #[Baking Sheet] in the refrigerator for another ~[10–15 minutes] to let the bites firm up before serving or storing.
  6. Transfer the bites to an #[Airtight Container]. Store in the refrigerator for up to ~[1 week], or freeze in a single layer before transferring to a #[Ziploc Bag] for up to ~[3 months].
