These no-bake energy bites are a tried-and-true staple for healthy snacking. Packed with rolled oats, peanut butter, honey, and chocolate chips, they come together in minutes with no oven required. Chewy, naturally sweet, and endlessly customizable — they're perfect for lunchboxes, post-workout fuel, or an afternoon pick-me-up. Make a batch on Sunday and snack all week.

In a large mixing bowl, combine the rolled oats, flaxseed, chia seeds (if using), mini chocolate chips, and kosher salt. Stir together until evenly mixed.

Add the creamy peanut butter, honey, and vanilla extract to the bowl. Using a spatula or clean hands, mix everything together until fully combined. The mixture should be sticky and hold together when pressed. If it feels too dry, add an extra teaspoon of honey. If too wet, add a tablespoon of rolled oats.

Cover the bowl with plastic wrap or a lid and refrigerate for 30 minutes. Chilling makes the mixture much easier to roll and helps the bites hold their shape.

Line a baking sheet with parchment paper. Remove the chilled mixture from the refrigerator. Using slightly damp hands (this prevents sticking), scoop about 1.5 tablespoons of the mixture and roll firmly between your palms to form a ball. Place on the prepared baking sheet. Repeat until all the mixture is used — you should get about 20 bites.

Place the baking sheet in the refrigerator for another 10–15 minutes to let the bites firm up before serving or storing.

Transfer the bites to an airtight container. Store in the refrigerator for up to 1 week, or freeze in a single layer before transferring to a Ziploc bag for up to 3 months.
