In a large mixing bowl, combine the 2 cups old-fashioned rolled oats, ⅓ cup ground flaxseed, ¼ cup chia seeds (if using), ½ cup mini chocolate chips, and ¼ tsp kosher salt. Stir together until evenly mixed.

Uses

  • Mixing Bowl
  • Rolled Oats
  • Chia Seeds
  • Flax Seed
  • Chocolate Chips
  • Salt

Add the ½ cup creamy peanut butter, ⅓ cup honey, and 1 tsp vanilla extract to the bowl. Using a spatula or clean hands, mix everything together until fully combined. The mixture should be sticky and hold together when pressed. If it feels too dry, add an extra teaspoon of honey. If too wet, add a tablespoon of old-fashioned rolled oats.

  • Creamy Peanut Butter
  • Honey
  • Vanilla Extract

Cover the bowl with plastic wrap or a lid and refrigerate for 30 minutes. Chilling makes the mixture much easier to roll and helps the bites hold their shape.

Uses

  • Plastic Wrap

Line a baking sheet with parchment paper. Remove the chilled mixture from the refrigerator. Using slightly damp hands (this prevents sticking), scoop about 1 ½ tbsp of the mixture and roll firmly between your palms to form a ball. Place on the prepared baking sheet. Repeat until all the mixture is used — you should get about 20 bites.

Place the baking sheet in the refrigerator for another 10–15 minutes to let the bites firm up before serving or storing.

Uses

  • Baking Sheet

Transfer the bites to an airtight container. Store in the refrigerator for up to 1 week, or freeze in a single layer before transferring to a Ziploc bag for up to 3 months.
