  • 25 min
  • Medium-High

Place the 2 lb bone-in in a large Dutch oven. Pour in the 6 cups chicken broth and 2 cups water. Bring to a boil over medium-high heat, then reduce heat to medium-low, cover, and simmer for 25 minutes until the 2 lb bone-in is cooked through and very tender.

Uses

  • Dutch Oven
  • Chicken Thigh
  • Chicken Broth
  • Water

Using tongs, transfer the cooked 2 lb bone-in to a cutting board. Let it rest for a few minutes until cool enough to handle. Remove and discard the skin and bones, then shred the meat into bite-sized pieces with two forks. Set aside. Reserve the cooking broth in a separate pitcher (Large).

Uses

  • Cutting Board
  • Pitcher (Large)

  • 6–8 min
  • Medium

Return the Dutch oven to medium heat and melt the 3 tbsp unsalted butter. Add the diced yellow onion diced, 3 stalks celery sliced, and 3 carrots peeled and sliced into rounds. Sauté, stirring occasionally, until the vegetables have softened, about 6–8 minutes. Add the minced cloves garlic minced and cook for 1 more minute until fragrant.

Uses

  • Dutch Oven
  • Unsalted Butter
  • Yellow Onion
  • Celery
  • Carrot
  • Garlic
  • 1–2 min

Sprinkle the ⅓ cup all-purpose flour over the vegetables and stir well to coat everything. Cook for 1–2 minutes to remove the raw flour taste, stirring constantly.

Uses

  • All-Purpose Flour
  • Medium

Slowly pour in the reserved 6 cups chicken broth, about 1 cup at a time, whisking or stirring constantly to prevent lumps. Then stir in the 1 cup whole milk, 1 tsp dried thyme, 1 tsp dried parsley, 1 tsp kosher salt, and ½ tsp black pepper freshly ground. Bring to a gentle simmer over medium heat.

Uses

  • Chicken Thigh
  • Chicken Broth
  • Milk
  • Thyme
  • Parsley

Return the shredded 2 lb bone-in to the pot and stir to combine. Add the 1 cup frozen peas if using. Taste the broth and adjust 1 tsp kosher salt and ½ tsp black pepper freshly ground as needed. Keep at a gentle simmer while you make the dumplings.

Uses

  • Peas
  • Chicken Broth
  • Salt
  • Black Pepper

In a medium mixing bowl, whisk together the ⅓ cup all-purpose flour, 1 tbsp baking powder, 1 tsp kosher salt, and 1 tsp dried parsley until combined.

Uses

  • Mixing Bowl
  • All-Purpose Flour
  • Baking Powder
  • Salt
  • Parsley

Add the melted unsalted butter and 1 cup whole milk to the dry ingredients. Stir with a fork just until a shaggy, soft dough comes together. Do not overmix — a few lumps are perfectly fine.

Uses

  • Unsalted Butter
  • Milk

Make sure the 6 cups chicken broth is at a gentle simmer (not a rolling boil). Drop heaping tablespoon-sized portions of dumpling dough directly onto the surface of the simmering broth, spacing them slightly apart. You should get about 12–14 dumplings.

Uses

  • Chicken Thigh
  • Chicken Broth
  • 15 min

Immediately place the lid on the Dutch oven and cook for 15 minutes without lifting the lid. The steam inside is what cooks the dumplings through — resist the urge to peek! After 15 minutes, a toothpick inserted into the center of a dumpling should come out clean.

Uses

  • Dutch Oven

Ladle the 2 lb bone-in, vegetables, broth, and dumplings into deep bowls. Garnish with a pinch of fresh or dried 1 tsp dried parsley if desired, and serve immediately.

Uses

  • Chicken Broth
  • Parsley
