Preheat your oven to 350°F. Grease a baking dish and line the bottom with parchment paper.

In a large mixing bowl, beat the 3 eggs and ¾ cup granulated sugar together with a hand mixer on high speed for 4–5 minutes until the mixture is very pale, thick, and has tripled in volume. Beat in the 1 tsp vanilla extract.

Sift the ¾ cup all-purpose flour, 1 tsp baking powder, and ¼ tsp salt over the 3 eggs mixture. Using a spatula, gently fold them in with slow, sweeping strokes — be careful not to deflate the batter.

In a large mixing bowl, combine the 1 cup fresh strawberries hulled and sliced, 1 cup fresh raspberries, and 1 cup fresh blueberries with the ¾ cup granulated sugar and 1 tbsp fresh lemon juice. Slowly pour about half of the hot 3 tbsp milk mixture into the 5 egg yolks mixture in a thin stream, whisking constantly (this is called tempering — it prevents the eggs from scrambling). Then pour everything back into the saucepan.

Cook the custard over medium heat, whisking constantly, until it thickens and begins to bubble — about 3–4 minutes. Once you see the first big bubble, cook for 1 more minute, then remove from heat.
