Preheat your oven to 350°F. Grease a baking dish and line the bottom with parchment paper.

In a large mixing bowl, beat the 3 eggs a temperatura ambiente and ¾ cup azúcar granulado together with a hand mixer on high speed for 4–5 minutes until the mixture is very pale, thick, and has tripled in volume. Beat in the 1 tsp extracto de vainilla.

Sift the ¾ cup harina para todo uso, 1 tsp polvo de hornear, and ¼ tsp sal over the 3 eggs a temperatura ambiente mixture. Using a spatula, gently fold them in with slow, sweeping strokes — be careful not to deflate the batter.

In a small mixing bowl, mix together the melted mantequilla sin sal derretida y enfriada and 3 tbsp leche. Pour it around the edge of the batter and fold in gently until just combined.

Pour the batter into the prepared baking dish and bake for 18–20 minutes, until the top is golden and a toothpick inserted in the center comes out clean. Let the cake cool completely in the pan, then cut into roughly 1-inch cubes.

In a large mixing bowl, combine the 1 cup fresas frescas, 1 cup frambuesas frescas, and 1 cup arándanos frescos with the ¾ cup azúcar granulado and 1 tbsp zumo de limón fresco. Toss gently and let macerate for at least 15 minutes — the berries will release their juices and become syrupy.

In a small mixing bowl, stir together the 1 cup frambuesas frescas and 3 tbsp zumo de naranja until smooth. This will be drizzled over the cake to moisten it.

In a medium saucepan, heat the 3 tbsp leche and ½ cup crema para cocinar over medium heat until steaming and just beginning to simmer around the edges. Do not boil.

In a mixing bowl, whisk together the 5 yemas de huevo, ¾ cup azúcar granulado, and 3 tbsp maicena until smooth and pale, about 1–2 minutes.

Slowly pour about half of the hot 3 tbsp leche mixture into the 5 yemas de huevo mixture in a thin stream, whisking constantly (this is called tempering — it prevents the eggs from scrambling). Then pour everything back into the saucepan.

Cook the custard over medium heat, whisking constantly, until it thickens and begins to bubble — about 3–4 minutes. Once you see the first big bubble, cook for 1 more minute, then remove from heat.

Stir in the 1 tsp extracto de vainilla and 4 tbsp mantequilla sin sal derretida y enfriada until the 4 tbsp mantequilla sin sal derretida y enfriada melts. Pour the custard through a sieve into a clean mixing bowl to remove any lumps. Press a sheet of plastic wrap directly onto the surface of the custard to prevent a skin from forming. Refrigerate until completely cold, at least 1 hour.

Just before assembling, pour the cold ½ cup crema para cocinar into a large chilled mixing bowl. Beat with a hand mixer on medium-high speed until it begins to thicken. Add the 3 tbsp azúcar en polvo and 1 tsp extracto de vainilla, then continue beating until soft, billowy peaks form. Do not overbeat.

Arrange half the sponge cake cubes in a single layer across the bottom of a large trifle mixing bowl (or a deep glass serving bowl). Drizzle half of the jam-3 tbsp zumo de naranja mixture evenly over the cake to moisten it.

Spoon half of the macerated ½ cup bayas frescas mixtas (with their juices) over the cake layer, spreading them to the edges so the colors show through the glass.

Pour or spoon half of the chilled custard evenly over the ½ cup bayas frescas mixtas layer, smoothing it gently with a spatula.

Repeat the layers: remaining cake cubes, jam drizzle, remaining bayas frescas mixtas, and remaining custard.

Dollop or pipe the whipped cream generously over the top layer of custard, covering it completely. Decorate with fresh bayas frescas mixtas and 2 tbsp hojas de menta fresca if using. Cover loosely and refrigerate for at least 2 hours (or overnight) before serving to let the layers meld together beautifully.
