Preheat your Oven to 350°F. Grease a Baking Dish and line the bottom with Parchment Paper.

In a large Mixing Bowl, beat the 3 eggs a temperatura ambiente and ¾ cup azúcar granulado together with a Hand Mixer on high speed for 4–5 minutes until the mixture is very pale, thick, and has tripled in volume. Beat in the 1 tsp extracto de vainilla.

In a medium Saucepan, heat the 3 tbsp leche and ½ cup crema para cocinar over medium heat until steaming and just beginning to simmer around the edges. Do not boil.

Slowly pour about half of the hot 3 tbsp leche mixture into the 3 eggs a temperatura ambiente mixture in a thin stream, whisking constantly (this is called tempering — it prevents the eggs from scrambling). Then pour everything back into the Saucepan.

Cook the custard over medium heat, whisking constantly, until it thickens and begins to bubble — about 3–4 minutes. Once you see the first big bubble, cook for 1 more minute, then remove from heat.

Just before assembling, pour the cold Heavy Whipping Cream into a large chilled Mixing Bowl. Beat with a Hand Mixer on medium-high speed until it begins to thicken. Add the ¾ cup azúcar granulado and 1 tsp extracto de vainilla, then continue beating until soft, billowy peaks form. Do not overbeat.

Arrange half the sponge cake cubes in a single layer across the bottom of a large trifle Mixing Bowl (or a deep glass serving bowl). Drizzle half of the jam-3 tbsp zumo de naranja mixture evenly over the cake to moisten it.

Decorate with fresh ½ cup bayas frescas mixtas para decorar and 2 tbsp hojas de menta fresca if using. Cover loosely and refrigerate for at least 2 hours (or overnight) before serving to let the layers meld together beautifully.
