Combine the diced roma tomatoes diced small, ½ white onion finely diced, 1 jalapeño seeded and finely diced, ¼ cup fresh cilantro finely chopped, 2 tbsp fresh lime juice from about 1 lime, and 1 tsp salt in a mixing bowl. Stir well and taste for seasoning. Set aside at room temperature while you cook the other components — this gives the flavors time to meld.

In a saucepan, bring the 2 ¾ cups water and 1 tsp salt to a boil over high heat. Add the rinsed 1 ½ cups long-grain white rice, stir once, then reduce heat to low. Cover tightly and cook until the 2 ¾ cups water is fully absorbed and the 1 ½ cups long-grain white rice is tender.
