Combine the diced tomates roma cortados en cubos pequeños, ½ cebolla blanca, 1 jalapeño sin semillas y, ¼ cup cilantro fresco picado fino, 2 tbsp jugo fresco de lima de aproximadamente 1 lima, and 1 tsp sal in a mixing bowl. Stir well and taste for seasoning. Set aside at room temperature while you cook the other components — this gives the flavors time to meld.

In a saucepan, bring the 2 ¾ cups agua and 1 tsp sal to a boil over high heat. Add the rinsed 1 ½ cups arroz blanco de grano largo, stir once, then reduce heat to low. Cover tightly and cook until the 2 ¾ cups agua is fully absorbed and the 1 ½ cups arroz blanco de grano largo is tender.

Remove the saucepan from heat and let the 1 ½ cups arroz blanco de grano largo sit, still covered, for 5 minutes. Then fluff with a dipping fork, drizzle in the 2 tbsp jugo fresco de lima de aproximadamente 1 lima, and fold in the chopped cilantro fresco picado fino. Taste and add more 1 tsp sal if needed. Keep covered until ready to serve.

Heat the 1 tbsp aceite de oliva in a skillet over medium-high heat. Add the diced cebolla amarilla and cook, stirring occasionally, until softened and lightly golden, about 4–5 minutes. Add the minced dientes ajo and cook for 30 seconds more until fragrant.

In a saucepan over medium heat, combine the drained lata frijoles negros escurridos y, 1 tsp comino, 1 tsp sal, and 2 tbsp jugo fresco de lima de aproximadamente 1 lima. Stir and heat through for 3–4 minutes until warmed. Taste and adjust seasoning. Keep warm over low heat until ready to serve.

Divide the cilantro-lime 1 ½ cups arroz blanco de grano largo evenly among 4 bowls as the base. Add a generous scoop of seasoned 1 lb carne molida 80/20 recomendado and a scoop of lata frijoles negros escurridos y alongside the 1 ½ cups arroz blanco de grano largo.

Top each mixing bowl with a big spoonful of pico de gallo, sliced aguacate cortado en rodajas o cubos, and shredded 1 cup queso mexicano rallado mezcla. Add shredded 1 cup lechuga romana, ½ cup crema agria, and salsa if using. Serve with 1 lima cortada en gajos wedges on the side for squeezing over the top.
