Preheat your oven to 350°F. Lightly grease a 24 cups mini muffin tin with cooking spray or ½ cup unsalted butter cut into pieces, making sure to coat the sides well.

In a medium mixing bowl, combine the ½ cup unsalted butter cut into pieces and chopped semi-sweet chocolate roughly chopped. Microwave in 30-second intervals, stirring between each, until fully melted and smooth. This usually takes 60–90 seconds total. Let the mixture cool for 3–4 minutes so it's warm but not hot.

Whisk the ¾ cup granulated sugar and ¼ cup light brown sugar into the melted semi-sweet chocolate roughly chopped mixture until combined. Add the 2 eggs one at a time, whisking well after each addition. Stir in the 1 tsp vanilla extract. The batter should look glossy and smooth.
