Preheat your oven to 375°F. Line a standard 12 cups muffin tin with paper liners or lightly grease each cup with ¼ cup virgin coconut oil. In a small mixing bowl, stir together 1 tbsp ground flaxseed mixed with 3 tbsp water and 3 tbsp water; set aside for 5 minutes to thicken into a flax egg.

In a large mixing bowl, whisk together the 1 cup old-fashioned rolled oats (reserving 2 tbsp for topping), 1 cup white whole wheat flour, 1 ½ tsp baking powder, ½ tsp baking soda, 1 tsp ground cinnamon, and ¼ tsp fine sea salt until evenly combined.

In the same mixing bowl or a separate bowl, mash the 3 whole very ripe bananas mashed thoroughly with a fork until mostly smooth. Stir in the ¼ cup pure maple syrup, melted virgin coconut oil, ⅓ cup unsweetened oat milk, 1 tsp vanilla extract, and 1 tbsp ground flaxseed mixed with 3 tbsp water. Mix until well combined.

Pour the wet ingredients into the dry ingredients and fold together with a spatula until just combined — do not overmix or the muffins will be dense. Fold in ½ cup chopped walnuts / ½ cup chocolate chips if using.

Divide the batter evenly among the 12 muffin cups, filling each about three-quarters full. Sprinkle the reserved 1 cup old-fashioned rolled oats over the tops of each muffin for a rustic finish.
