  • 1 lb sweet Italian sausage casings removed
  • 1 yellow onion finely diced
  • 4 cloves garlic minced
  • 2 can crushed tomatoes
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 0.5 tsp red pepper flakes
  • 1 tsp sugar to balance acidity
  • 1 tsp kosher salt
  • 0.5 tsp black pepper freshly ground
  • 1 tbsp olive oil
  • 3 cup low-moisture mozzarella shredded, divided
  • 2 tbsp fresh basil torn or chiffonade

Ricotta Mixture

  • 15 oz whole-milk ricotta
  • 1 egg lightly beaten
  • 0.5 cup Parmesan cheese freshly grated, divided
  • 0.25 tsp kosher salt
  • 0.25 tsp black pepper

Instructions

  1. Preheat your #[Oven] to ![375°F]. Bring a large #[Pot] of heavily salted water to a boil. Cook the @[Ziti Pasta] ~[2 minutes] less than the package directions (it will finish cooking in the #[Oven]). Reserve ~[1/2 cup] of pasta water, then drain the pasta. Set aside.
  2. Heat @[Olive Oil] in a large #[Skillet] over ^[medium-high heat]. Add the @[Ground Beef] and @[Sweet Italian Sausage]. Break the meat up with a #[Wooden Spoon] and cook until no pink remains, about ~[7–8 minutes]. Drain excess fat, leaving about 1 tablespoon in the pan.
  3. Reduce heat to ^[medium]. Add the diced @[Yellow Onion] and cook until softened, about ~[4–5 minutes]. Add the @[Garlic] and cook for ~[1 more minute] until fragrant.

  9. Add the remaining pasta-ricotta mixture. Top with the rest of the meat sauce. Sprinkle the remaining 2 cups of @[Mozzarella Cheese] evenly over the top, followed by the remaining 1/4 cup of @[Parmesan Cheese].
  10. Cover the #[Baking Dish] tightly with #[Aluminum Foil]. Bake at ![375°F] for ~[25 minutes]. Remove the foil and bake for another ~[20 minutes], until the cheese is melted, bubbly, and golden brown in spots.
  11. Remove from the #[Oven] and let the baked @[Ziti Pasta] rest for ~[10 minutes] before serving — this helps it hold together when scooping. Garnish with fresh @[Basil] and serve hot.
