Make the simple syrup: Combine 1 cup granulated sugar and 1 cup water in a small saucepan over medium heat. Stir frequently until the 1 cup granulated sugar is completely dissolved, about 3–5 minutes. Do not let it boil vigorously. Remove from heat and let cool to room temperature. (You can speed this up by placing the pan in an ice bath.

Juice your lemons: Roll each 1 cup fresh lemon juice from about 6–8 large lemons firmly on the counter with your palm before cutting — this breaks down the cells and maximizes juice yield. Juice the 1 cup fresh lemon juice from about 6–8 large lemons using a citrus juicer, then strain through a sieve to remove seeds and pulp. You need 1 cup of juice (about 6–8 large lemons).
