1.5 lb boneless skinless chicken thighs cut into 1-inch pieces
1 yellow onion finely diced
4 cloves garlic minced
1 tbsp fresh ginger grated or finely minced
2 tbsp neutral oil such as vegetable or canola oil
1 can diced tomatoes
1 can coconut milk full-fat for best results
2 tsp garam masala
1.5 tsp ground cumin
1.5 tsp ground coriander
1 tsp ground turmeric
0.5 tsp cayenne pepper adjust
1 tsp kosher salt plus more
1 tsp sugar
2 tbsp fresh cilantro roughly chopped
0.5 lemon cut into wedges

Instructions
- Mix together all the spice blend ingredients (@[Garam Masala], @[Cumin], @[Coriander], @[Turmeric], @[Cayenne Pepper], and @[Kosher Salt]) in a small #[Mixing Bowl]. Set aside.
- Heat the @[Neutral Oil] in a large #[Skillet] ^[over medium-high heat]. Add the diced @[Yellow Onion] and cook, stirring occasionally, until softened and lightly golden — ~[about 5 to 6 minutes].
