In a large mixing bowl, whisk together the 1 ¼ cups all-purpose flour and ½ tsp salt. Preheat the oven to 375°F. On a lightly 1 ¼ cups all-purpose flour-dusted surface, roll the chilled dough into a circle about 12 inches in diameter and roughly 1/8-inch thick. Carefully transfer to a pie dish, pressing gently into the bottom and sides. Trim any overhang to about 1/2 inch and fold it under itself to create a neat edge. Blind bake the crust: Line the inside of the crust with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes, then carefully remove the parchment paper and weights. Bake for another 5–8 minutes, until the bottom looks dry and just barely golden. Remove from the oven. If using, brush the bottom of the warm crust with a thin layer of Dijon mustard — this adds flavor and creates a moisture barrier.

Set oven to 400°F. You can start bacon in a cold oven as it preheats, or wait until fully preheated — both work. Use an external meat thermometer if your oven runs inaccurate.
