At least 2 hours before serving (or the night before), place your 2 bottles champagne or dry sparkling wine well bottles in the refrigerator or in an bucket filled with 1 cup ice for chilling the bottle in an ice bucket and water. 2 bottles champagne or dry sparkling wine well should be served at 45–48°F — very cold but not frozen.

Set out your champagne flutes on a tray or flat surface. Place one 6 pieces white sugar cubes in the bottom of each flute.

Add 2 dashes of dashes Angostura bitters 2 dashes per glass directly onto each 6 pieces white sugar cubes. The cube will absorb the bitters and slowly dissolve during drinking, releasing gentle waves of flavor.

Using a peeler, cut a thin strip of whole lemon for peel twists peel (about 2–3 inches long) for each glass, avoiding the bitter white pith. Twist each strip gently over the glass to release the citrus oils, then rest it on the rim or drop it into the flute.

Just before serving (ideally within 5 minutes of the midnight countdown), open the 2 bottles champagne or dry sparkling wine well by removing the aluminum foil and wire cage, then place a cloth over the cork and twist the bottle — not the cork — slowly until it releases with a soft sigh rather than a loud pop. This preserves the bubbles.

Pour the 2 bottles champagne or dry sparkling wine well slowly and at a slight angle into each flute, filling to about two-thirds full. Pouring slowly prevents overflow and preserves the effervescence. The bitters-soaked 6 pieces white sugar cubes will cause a beautiful cascade of bubbles.
