Instructions
- In a small #[Mixing Bowl], whisk together the @[Olive Oil], @[Lemon] zest, @[Lemon] juice, minced @[Garlic], @[Thyme], @[Rosemary], @[Parsley], @[Kosher Salt], @[Black Pepper], and @[Onion Powder] until combined.
- Pat the @[Chicken Thighs] completely dry with paper towels — this is the key to crispy skin. Place them in a shallow dish or #[Ziploc Bag] and pour about two-thirds of the marinade over the @[Chicken Thighs]. Reserve the remaining marinade for basting. Toss to coat well. - Roast for ~[25–28 minutes], until the internal temperature of the thickest part of the meat (not touching the bone) reads %[165°F] on an #[Meat Thermometer] and the skin is deeply golden and crispy. Remove from the #[Oven] and let the @[Chicken Thighs] rest in the pan for ~[5 minutes].
- Transfer the rested @[Chicken Thighs] to a serving plate. Place the #[Cast Iron Skillet] back on the #[Stovetop] over ^[medium heat].
