Make the dressing: In a small mixing bowl, whisk together the ¼ cup extra virgin olive oil, 2 tbsp red wine vinegar, 1 tsp dried oregano, ½ tsp garlic powder, ½ tsp dried basil, ½ tsp kosher salt, ¼ tsp black pepper freshly ground, and ½ tsp sugar until well combined. Taste and adjust seasoning. Set aside.
