Mix together with a fork or spatula until fully combined and smooth.

Rub the outside of the whole turkey 12–14 lb all over with 2 tbsp olive oil, then season generously with 1 tbsp kosher salt and 1 ½ tsp black pepper freshly ground, including the underside and inside the cavity.

Gently loosen the skin over the 1 whole turkey 12–14 lb breast and thighs by sliding your fingers carefully underneath, being careful not to tear it. Push about two-thirds of the herb 8 tbsp unsalted butter under the skin, pressing from the outside to spread it evenly over the breast and thigh meat. Rub the remaining herb 8 tbsp unsalted butter all over the outside of the skin.
