  • 1 package taco seasoning
  • 0.33 cup water

  • 1 head romaine lettuce chopped into bite-sized pieces
  • 1 can black beans drained and rinsed
  • 1 can whole kernel corn drained
  • 2 Roma tomatoes diced
  • 0.5 red onion finely diced
  • 1 avocado diced
  • 1.5 cup shredded Mexican cheese blend
  • 4 oz tortilla chips lightly crushed

Dressing

  • 0.5 cup sour cream
  • 0.25 cup mayonnaise
  • 2 tbsp fresh lime juice about 1 lime
  • 1 tsp lime zest
  • 2 tbsp fresh cilantro finely chopped
  • 0.5 tsp garlic powder
  • 0.5 tsp cumin
  • 0.5 tsp salt

Garnish

  • 0.25 cup sour cream
  • 1 tbsp fresh cilantro roughly chopped
  • 1 lime cut into wedges

Instructions

  1. Make the dressing: In a small #[Mixing Bowl], #[Whisk] together the @[Sour Cream], @[Mayonnaise], @[Lime Juice], @[Lime Zest], @[Cilantro], @[Garlic Powder], @[Cumin], @[Salt], and hot sauce (if using) until smooth. Taste and adjust seasoning. Cover and refrigerate until ready to serve.
  2. Cook the taco meat: Heat a large #[Skillet] over ^[medium-high heat]. Add the @[Beef 80/20 Recommended] and cook, breaking it apart with a #[Wooden Spoon], until fully browned with no pink remaining, about ~[7–8 minutes]. Drain excess grease using a #[Colander].

Simmer for ~[2–3 minutes] until the liquid is absorbed and the meat is evenly coated. Remove from heat and let cool slightly, about ~[5 minutes].
