In a large pot over medium heat, melt the 2 tbsp unsalted butter with the 1 tbsp olive oil. Add the chopped yellow onion roughly chopped, 2 stalks celery roughly chopped, and 1 carrot roughly chopped. Cook, stirring occasionally, for 6–8 minutes until the vegetables are softened and the onion is translucent.

Add the minced cloves garlic minced and cook for 1 more minute, stirring constantly, until fragrant. Be careful not to let it brown.
