Main Course

  • 4 lb boneless pork shoulder (pork butt) cut into 3-inch chunks
  • 2 tsp kosher salt
  • 1 tsp black pepper freshly ground
  • 1 cup fresh orange juice from about 2 large oranges
  • 0.25 cup fresh lime juice from about 2 limes
  • 0.5 cup water
  • 1 medium white onion roughly chopped
  • 6 cloves garlic smashed
  • 2 tsp ground cumin
  • 1 tsp dried oregano preferably Mexican oregano
  • 1 tsp chili powder
  • 0.5 tsp smoked paprika
  • 2 whole bay leaves
  • 1 whole cinnamon stick
  • 16 small corn tortillas warmed
  • 1 medium white onion finely diced
  • 1 bunch fresh cilantro roughly chopped
  • 2 whole limes cut into wedges
  • 1 medium avocado sliced or mashed

Instructions
