In a large mixing bowl, whisk together the 1 ¼ cups all-purpose flour, ½ tsp salt, and ½ tsp granulated sugar. Add the cold cubed 8 tbsp unsalted butter cold and use your fingertips or a pastry brush to work it into the 1 ¼ cups all-purpose flour until the mixture resembles coarse, pea-sized crumbs. You want some larger 8 tbsp unsalted butter cold chunks remaining — these create flaky layers.

Drizzle in 3 tablespoons of ice water, one tablespoon at a time, tossing with a fork after each addition. Stop adding 3 tbsp ice water when the dough just begins to clump together and holds when you pinch it. Do not overwork it.

Turn the dough out onto a lightly floured surface, press it into a flat disc, and wrap tightly in plastic wrap. Refrigerate for at least 30 minutes (or up to 2 days). This relaxes the gluten and firms up the 8 tbsp unsalted butter cold for a flakier crust.
