Slice one ¼ cup orange juice freshly squeezed into rounds and use a peeler to peel wide strips of zest from the 1 whole lemon zest peeled in wide strips, avoiding the bitter white pith. Lightly crush the 6 whole cardamom pods lightly crushed with the flat of a knife.

Pour the entire bottle of bottle dry red wine such as Merlot into a saucepan over medium-low heat. Add the ¼ cup orange juice freshly squeezed and ¼ cup brandy (if using).

Add the ¼ cup orange juice freshly squeezed rounds, 1 whole lemon zest peeled in wide strips strips, 3 whole cinnamon sticks, cloves, 6 whole star anise, crushed 6 whole cardamom pods lightly crushed, ¼ tsp ground nutmeg freshly grated preferred, and 2 whole bay leaves (if using).

Stir in the 3 tbsp honey until dissolved. Start with 3 tbsp and adjust sweetness later — different wines vary in dryness.

Heat the wine slowly over medium-low heat until it just begins to steam and tiny bubbles appear around the edges — about 160°F. This takes roughly 10–15 minutes. Do NOT let it boil; boiling will cook off the alcohol and can make the wine taste harsh.

Once steaming, reduce the heat to the lowest setting. Let the wine gently infuse for 10 more minutes, keeping it below a simmer. Stir occasionally.

Taste and adjust: add more 3 tbsp honey for sweetness, a splash more ¼ cup brandy for warmth, or a squeeze of lemon juice for brightness.
