Soup

  • 3 tbsp olive oil
  • 1 yellow onion diced
  • 3 carrots peeled and diced
  • 3 stalks celery diced
  • 5 cloves garlic minced
  • 1 can diced tomatoes
  • 1.5 cup red lentils rinsed
  • 7 cup low-sodium vegetable broth
  • 1.5 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp smoked paprika
  • 0.5 tsp ground turmeric
  • 0.25 tsp cayenne pepper
  • 1 tsp kosher salt plus more
  • 0.5 tsp black pepper freshly ground
  • 2 tbsp lemon juice freshly squeezed
  • 1 handful fresh parsley roughly chopped
  • 1 tbsp olive oil for drizzling
  • 1 pinch smoked paprika for dusting
  • 1 lemon cut into wedges

Instructions

  1. Heat the @[Olive Oil] in a large #[Dutch Oven] or heavy-bottomed #[Pot] over ^[medium heat]. Once shimmering, add the diced @[Yellow Onion], @[Carrots], and @[Celery]. Cook, stirring occasionally, until the vegetables are softened and the onion is translucent, about ~[8–10 minutes]. Don't rush this step — building a good soffritto is the flavor foundation of the soup.
  2. Add the minced @[Garlic], @[Cumin], @[Coriander], @[Smoked Paprika], @[Turmeric], and @[Cayenne Pepper] (if using). Stir constantly and cook for ~[1–2 minutes] until very fragrant. The spices will toast in the @[Olive Oil] and coat the vegetables — this step makes a big difference in depth of flavor.
