Toast the nuts (if using): Place chopped walnuts or ½ cup pecan in a dry skillet over medium heat. Stir frequently for 3–4 minutes until fragrant and lightly golden. Transfer to a plate to cool. Set aside.

In a medium saucepan, combine the ½ cup heavy cream, ½ cup light corn syrup, ¼ cup, ¼ cup unsweetened cocoa powder, and ¼ tsp fine salt. Whisk well to combine, then bring to a simmer over medium heat, stirring frequently.
