Preheat your oven to 400°F. Place a 10-inch cast iron skillet (or an 8x8-inch baking dish) in the oven while it preheats — this is key to getting a crispy bottom crust.

In a large mixing bowl, whisk together the 1 cup yellow cornmeal fine or medium grind, 1 cup all-purpose flour, ¼ cup granulated sugar, 1 tbsp baking powder, ½ tsp baking soda, and ¾ tsp salt until evenly combined.

In a separate medium mixing bowl or large measuring cups, whisk together the 1 cup buttermilk, 2 eggs, melted unsalted butter, and ¼ cup vegetable oil until smooth.
