Soup

  • 2 bone-in, skin-on chicken breasts about 1.5 lbs total
  • 2 bone-in, skin-on chicken thighs about 1 lb total
  • 2 tbsp olive oil
  • 1 yellow onion diced
  • 3 carrots peeled and sliced into rounds
  • 3 stalks celery sliced
  • 4 cloves garlic minced
  • 8 cup low-sodium chicken broth
  • 2 cup water
  • 2 tsp fresh thyme leaves or 3/4 tsp dried thyme
  • 3/4 tsp dried thyme
  • 2 whole bay leaves
  • 1 tsp kosher salt plus more
  • 0.5 tsp black pepper freshly ground, plus more
  • 6 oz wide egg noodles
  • 3 tbsp fresh parsley chopped

Instructions
