Make sure your 10 oz Champagne or 10 oz Champagne is well chilled — ideally in an bucket for 20–30 minutes or in the refrigerator for at least 3 hours before serving. Cold wine preserves the bubbles and keeps the drink refreshing.

Place one 2 pieces white sugar cubes in the bottom of each glass (Large). Saturate each cube with 4–5 dashes of dashes Angostura bitters 5 dashes per cocktail, letting it soak in. The cube should turn a deep reddish-brown but hold its shape.

Pour 1 oz of Cognac; 1 oz per cocktail (or 2 oz Cognac; 1 oz per cocktail) gently over the soaked 2 pieces white sugar cubes in each glass (Large).

Slowly top each glass (Large) with chilled 10 oz Champagne, pouring down the side of the glass to preserve as many bubbles as possible. Fill to about 1 inch from the rim. The 2 pieces white sugar cubes will begin to effervesce and send a steady stream of tiny bubbles rising to the surface.

To make a 2 pieces lemon twists for garnish twist, cut a 3-inch strip of pieces lemon twists for garnish peel, avoiding the white pith.
