Make the tomato topping first so the flavors have time to meld. Halve the 1 ½ lb ripe Roma or vine tomatoes about 4–5 medium, use a spoon to scoop out and discard the seeds and watery pulp, then finely dice the flesh. This step is key — removing the seeds prevents soggy bread.

Uses

  • Tomato
  • 10–30 min

In a mixing bowl, combine the diced ripe Roma or vine tomatoes about 4–5 medium, minced cloves garlic peeled, ¼ cup fresh basil leaves thinly sliced chiffonade, 3 tbsp extra-virgin olive oil, 1 tsp balsamic vinegar, ½ tsp kosher salt, and ¼ tsp black pepper freshly ground. Stir gently to combine. Taste and adjust ½ tsp kosher salt; add the optional pinch of sugar only if tomatoes are not very sweet if the 1 ½ lb ripe Roma or vine tomatoes about 4–5 medium are acidic. Set aside at room temperature for at least 10 minutes (up to 30 minutes) to let the flavors develop.

Brush one side of each bread slice generously with 3 tbsp extra-virgin olive oil. Place under the broiler and toast for 2–3 minutes, watching closely, until the tops are golden and crisp. Flip the slices, brush the second side lightly with 3 tbsp extra-virgin olive oil, and broil for another 1–2 minutes until golden.

Remove the toasted bread from the oven. While still hot, immediately rub the top of each slice with the cut side of a halved 2 cloves garlic peeled clove. The warm, porous bread will absorb the raw 2 cloves garlic peeled beautifully — this is the authentic flavor secret of bruschetta.

Uses

  • Oven
  • Garlic

Using a slotted spoon, lift the 1 ½ lb ripe Roma or vine tomatoes about 4–5 medium mixture and place a generous spoonful onto each toast, leaving excess liquid in the bowl. This keeps the bread crispy longer.

  • Slotted Spoon
  • Tomato

Arrange the bruschetta on a serving platter. If desired, drizzle with 1 tbsp balsamic glaze store-bought or homemade, scatter a few fresh fresh basil leaves thinly sliced leaves on top, and finish with shaved ¼ cup Parmesan cheese freshly shaved or grated. Serve immediately for the best texture.
