Bread

  • 1 whole baguette cut into 1/2-inch slices on a slight diagonal
  • 3 tbsp extra-virgin olive oil
  • 2 cloves garlic peeled, halved

Tomato Topping

  • 1.5 lb ripe Roma or vine tomatoes about 4–5 medium, seeded and finely diced

  • 1 tsp balsamic vinegar
  • 0.5 tsp kosher salt plus more

  • 0.5 tsp sugar only if tomatoes are not very sweet

Garnish

  • 1 tbsp balsamic glaze store-bought or homemade, for drizzling
  • 2 tbsp fresh basil leaves extra for garnish
  • 0.25 cup Parmesan cheese freshly shaved or grated

Instructions

  1. Make the tomato topping first so the flavors have time to meld. Halve the @[Tomato], use a spoon to scoop out and discard the seeds and watery pulp, then finely dice the flesh. This step is key — removing the seeds prevents soggy bread.
  2. In a #[Mixing Bowl], combine the diced @[Tomato], minced @[Garlic], @[Basil] chiffonade, @[Olive Oil], @[Balsamic Vinegar], @[Salt], and @[Black Pepper]. Stir gently to combine. Taste and adjust @[Salt]; add the optional pinch of @[Sugar] if the @[Tomato] are acidic. Set aside at room temperature for at least ~[10 minutes] (up to ~[30 minutes]) to let the flavors develop.
  3. Set your #[Oven] #[Broiler] to ^[high] and position a rack about 6 inches from the heating element. Arrange the @[Baguette] slices in a single layer on a #[Baking Sheet].
