Heat a large skillet over medium-high heat. Add the 1 lb Italian pork sausage casings removed and cook, breaking it up with a wooden spoon, until browned and cooked through, about 6–8 minutes. Use a slotted spoon to transfer the sausage to a paper-towel-lined plate, leaving about 1 tbsp of drippings in the pan.

Uses

  • Skillet
  • Wooden Spoon
  • Slotted Spoon

  • 5–6 min
  • Medium

Reduce heat to medium. Add the diced yellow onion diced and 1 red bell pepper diced to the skillet and cook, stirring occasionally, until softened, about 5 minutes. Add the 3 cloves garlic minced and cook for 1 minute more until fragrant. If using 2 cups baby spinach roughly chopped, stir it in and cook just until wilted, about 1 minute. Remove from heat.

  • Yellow Onion
  • Red Bell Pepper
  • Black Pepper
  • Garlic
  • Baby Spinach

Spread half of the bread cubes in an even layer in the prepared baking dish. Top with half the cooked 1 lb Italian pork sausage casings removed, half the vegetable mixture, and ¾ cup of the shredded 2 cups sharp cheddar cheese shredded. Repeat with the remaining bread, sausage, and vegetables. Reserve the remaining 1 ¼ cups of cheese for the top.

Uses

  • Baking Dish
  • Italian Sausage
  • Sharp Cheddar Cheese

In a large mixing bowl, whisk together the 8 eggs large, 2 cups whole milk, ½ cup heavy cream, 1 tsp Dijon mustard, 1 tsp kosher salt, ½ tsp black pepper freshly ground, ¼ tsp nutmeg freshly grated or ground, and thyme (if using) until fully combined and smooth.

  • Mixing Bowl
  • Egg
  • Milk
  • Heavy Cream
  • Dijon Mustard
  • Salt
  • Black Pepper

Slowly and evenly pour the egg custard over the layered bread and 1 lb Italian pork sausage casings removed in the baking dish. Cover the dish tightly with plastic wrap and refrigerate for at least 1 hour, or ideally overnight (8–12 hours).

Uses

  • Plastic Wrap
  • 20–30 min
  • 350°F

When ready to bake, remove the strata from the refrigerator and let it sit at room temperature for 20–30 minutes while you preheat the oven to 350°F.

Uses

  • 25–30 min
  • 350°F

Remove the plastic wrap and cover the dish loosely with aluminum foil. Bake for 30 minutes, then uncover and continue baking for another 25–30 minutes, until the top is golden brown, the cheese is bubbly, and the center is set (a knife inserted in the center should come out clean, or an instant-read thermometer should read 160°F).

  • Sharp Cheddar Cheese
  • 10 min

Remove from the oven and let the strata rest for 10 minutes before slicing.

Uses

  • Oven
