In a shallow dish, whisk together the 2 cups all-purpose flour, 1 tsp kosher salt, 1 tsp black pepper freshly ground, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp smoked paprika, and ½ tsp cayenne pepper until evenly combined. In a second shallow dish, whisk together the 2 eggs large, ¾ cup buttermilk, and 1 tsp hot sauce such as Tabasco (if using).

Dredge one 4 cube steaks about 6 oz each in the seasoned 2 cups all-purpose flour, pressing firmly on both sides so the flour adheres well. Shake off any excess. Carefully pour off all but about 4 tbsp of the frying 1 ½ cups vegetable oil, leaving the browned drippings in the pan. Return the cast iron skillet to medium heat.
