In a large Mixing Bowl, whisk together the yogurt, Lemon Juice, and Neutral Oil until smooth. Add the grated Garlic, Ginger, Kashmiri chili powder, Cayenne Pepper, Cumin, Coriander, Garam Masala, Turmeric, Paprika, Kosher Salt, and Sugar. Whisk until fully combined into a uniform, deep red-orange marinade. Taste it — it should be bold, tangy, and well-seasoned.

Using a Knife, make 2–3 deep diagonal slashes through the thickest part of each chicken piece, cutting all the way to the bone. This is essential — it allows the marinade to penetrate deeply and ensures even cooking.

Add the chicken pieces to the marinade bowl and turn to coat thoroughly, pressing the marinade into the slashes with your hands. Cover the bowl tightly with Plastic Wrap and refrigerate for at least 4 hours, or ideally overnight (up to 24 hours).

When ready to cook, remove the chicken from the refrigerator and let it sit at room temperature for 30 minutes. This takes the chill off and promotes more even cooking.

Preheat your Oven to ![450°F]. Line a Baking Sheet with Aluminum Foil and set a Wire Rack on top. Lightly oil the rack. Place the marinated chicken pieces on the rack in a single layer, leaving space between each piece. Shake off any excess marinade that is pooling — a thin, even coating is what you want.

Roast the chicken on the center rack for 25–30 minutes, until the marinade is set and beginning to char at the edges. Bone-in thighs and legs are done when an instant-read thermometer inserted into the thickest part (not touching bone) reads %[165°F].

Switch the Oven to ^[broil (high)] and broil the chicken for 4–5 minutes, watching closely, until you see dark, slightly charred spots forming on the surface — this mimics the char of a traditional tandoor and is where the magic happens.

Remove the chicken from the Oven and let it rest on the rack for 5 minutes before serving. This allows the juices to redistribute.

Arrange the chicken on a platter. Sprinkle with Chaat Masala if using, and scatter fresh Cilantro over the top. Serve with sliced Red Onion rings, Lemon wedges for squeezing, and warm naan or basmati rice on the side.
