In a large mixing bowl, whisk together the yogurt, 2 tbsp jugo de limón, and 1 tbsp aceite neutro como aceite vegetal o de canola until smooth. Add the grated dientes de ajo finamente rallados o, 1 tbsp jengibre fresco finamente rallado, Kashmiri chili powder, 1 tsp pimienta de cayena reducir a 1/2 tsp para un picante más suave, 2 tsp comino, 2 tsp cilantro, 1 tsp garam masala, 1 tsp cúrcuma, 1 tsp pimentón, 1 ½ tsp sal kosher, and 1 tsp azúcar ayuda al dorado. Whisk until fully combined into a uniform, deep red-orange marinade. Taste it — it should be bold, tangy, and well-seasoned.

Uses

  • Mixing Bowl
  • Cilantro
  • Garam Masala

Using a knife, make 2–3 deep diagonal slashes through the thickest part of each chicken piece, cutting all the way to the bone. This is essential — it allows the marinade to penetrate deeply and ensures even cooking.

Uses

  • Knife
  • 240–1,440 min

Add the chicken pieces to the marinade bowl and turn to coat thoroughly, pressing the marinade into the slashes with your hands. Cover the bowl tightly with plastic wrap and refrigerate for at least 4 hours, or ideally overnight (up to 24 hours).

When ready to cook, remove the chicken from the refrigerator and let it sit at room temperature for 30 minutes. This takes the chill off and promotes more even cooking.

  • 450°F

Preheat your oven to 450°F. Line a baking sheet with aluminum foil and set a wire rack on top. Lightly oil the rack. Place the marinated chicken pieces on the rack in a single layer, leaving space between each piece. Shake off any excess marinade that is pooling — a thin, even coating is what you want.

Roast the chicken on the center rack for 25–30 minutes, until the marinade is set and beginning to char at the edges. Bone-in thighs and legs are done when an instant-read thermometer inserted into the thickest part (not touching bone) reads 165°F.

  • High

Switch the oven to broil (high) and broil the chicken for 4–5 minutes, watching closely, until you see dark, slightly charred spots forming on the surface — this mimics the char of a traditional tandoor and is where the magic happens.

Uses

  • Oven
  • 5 min

Remove the chicken from the oven and let it rest on the rack for 5 minutes before serving. This allows the juices to redistribute.

Uses

  • Oven
  • Lemon Juice

Arrange the chicken on a platter. Sprinkle with 1 tsp chaat masala para espolvorear sobre el pollo terminado if using, and scatter fresh manojo cilantro fresco picado aproximadamente over the top. Serve with sliced cebolla roja pequeña finamente rings, 1 limón entero wedges for squeezing, and warm naan or basmati rice on the side.

Uses

  • Chaat Masala
  • Cilantro
